Oven-Braised Kale and Onions

Kale is on sale at Whole Foods in NYC, yippee! I bought 2 bunches of organic red kale for $5.00.  I was planning on baking bread last night, so I decided to oven-braise one of the kale bunches since the oven was going to be on anyways.  The color from the kale bled into the onions during cooking, which made them a beautiful lavender. 

Ingredients:

1 bunch kale 

1/2 medium onion, chopped

2 tbsp malt vinegar (plus more, for serving)

1 cup water

1 tsp salt

1 tsp red pepper flakes

Preheat oven to 400 (F). 

Step 1: Wash the kale really well to get all of the grit off of it, and trim off the bottom 1/2 inch of each stalk and discard. 

Step 2: Cut the kale into bite sized pieces (include the thick part of the stalks, they will get really tender when braised). 

Step 3: Spread the onion out on the bottom of a roasting pan, and pile the kale on top (I used a 9x9 in square brownie pan and my kale was cozy but it turned out great).

Step 4: Sprinkle the vinegar, salt, pepper flakes over the kale and pour the water into the pan. 

Step 5: Cover tightly with aluminum foil and pop it in the oven for 30 minutes.  

Step 6: Remove from the oven, carefully take the aluminum foil off (some steam may come out). Serve and provide malt vinegar at the table to sprinkle over the kale as desired (Michigan style).
