Pickled Kale

Tastes even more awesome than it sounds. Delicious on sandwiches, and makes an amazeballs garnish for dirty martinis and bloody marys (try adding some of the brine to your martinis and bloodies- soooo good)!

Ingredients:

1 bunch organic kale, washed very well (I like red kale best for this)

1/2 c apple cider vinegar (I like Braggs)

3 tbsp salt

Water

Step 1: Trim the bottom 1/4-1/2 inch off the kale and discard. Chop the rest of the kale into bite-sized pieces (include the stalks-they taste amazing pickled).

Step 2: Place the kale in a glass bowl and pour on the vinegar and salt. Cover with water so the water is 1/2 inch above the kale. Mix well and refrigerate. The pickles will be ready about 5 days later.
