Super amazing kale salad
A lunch companion last week said “When you eat kale, you just know you’re doing something good for yourself!” So true. And so tasty!
Here’s my version of kale salad. it’s bright (because of the vinegar), creamy (because of the sesame), and oh-so-good for you, too!
Ingredients:
1 bunch kale, washed very well
1/2 c water
1/4 c raw sesame seeds
1/8 c nama shoyu (raw soy sauce)
1/8 c apple cider vinegar (I use Bragg’s Live Raw version)
Step 1: Cut off the bottom 1/4-1/2 inch of each kale stalk and discard. Chop the rest of the kale and place in a large bowl (include the stems (except the very bottoms, which you already removed-they are too dry to be tasty)-they are crunchtastic and you paid good money for them, so you should eat them!)
Step 2: Blend the rest of the ingredients in your blender until fairly smooth (since the sesame seeds are so tiny, they may stay a bit chunky).
Step 3: Pour the dressing over the kale and toss well. Tastes great immediately, but I like it better the next day-the kale will absorb more of the dressing if left to marinate in the fridge overnight.
